Exquisite ranch to table 5-course family style dinner
Welcome cocktail
1st Course: Amuse-bouche
sweet potato croquette with Cacachilas ham, guajillo chile crisp, cempasúchil cheese and chipotle cream, edible “naranjita” gel, and garden celery–basil sauce.
2nd Course: Sous-vide totoaba with dill and lemons from our garden
glazed with ranch honey. Coconut sauce with damiana oil, garden microgreens, and beans braised with Cacachilas chorizo.
3rd Course: Pork belly
sweet potato purée, garden confit vegetables, pasilla chile and date reduction, and Cacachilas brioche.
4th Course: Palate cleanser
cucumber sorbet with fresh mint from the garden.
5th Course: Bread pudding in textures
infused with star anise and cinnamon, served with piloncillo sauce.

Itinerary
4:00 p.m. – Meet the Rancho Cacachilas staff at the main gate and welcome greeting.
4:15 p.m. – Transfer to Rancho Gaspareño and begin the guided tour through the garden, corrals, and tack room.
4:30 p.m. – Welcome ponche (traditional warm fruit drink).
5:00 p.m. – Posada and piñata.
6:00 p.m. – “Chai Lavender” cocktail and live music.
7:00 p.m. – Five-course dinner.
8:00 p.m. – Campfire, stargazing, and hot beverages.
8:30 p.m. – End of the evening.

We recommend bringing a sweater or jacket. It may not be cold during the day, but temperatures drop at night, especially at the ranch! Layered clothing is always a good idea :)
Although we believe you'd look amazing in heels, we don’t recommend them much as the ranch terrain is not flat We don’t actually have a dress code, wear whatever makes you happy!
