1st Course Amuse-bouche
artisan blue corn infladita filled with creamy palo blanco cheese, garden parsley, and serrano chile; garnished with cilantro sprouts, watermelon radish, and pomegranate gel.
2nd Course Fresh oyster with a cherry tomato
–based bloody mary and frozen lemon–serrano chile air.
3rd Course Red snapper with a rosemary
garlic, and rancho acorn crisp; lemon, white wine, and wild plum sauce; fresh garden kale and lettuce; roasted cauliflower, warm sunflower-cheese foam, and spicy hibiscus reduction.
4th Course Beet purée with lemon-brined roasted pork leg

We recommend bringing a sweater or jacket. It may not be cold during the day, but temperatures drop at night, especially at the ranch! Layered clothing is always a good idea :)
While we think you’d look amazing in heels, we don't recommend them as the ranch terrain isn’t flat We don’t actually have a dress code, so wear whatever makes you happy!
