1st Course:
Caprese salad amuse-bouche with cherry tomatoes and garden basil, cempasúchil cheese, and balsamic vinegar reduction.
2nd Course:
Beet and garden tomato gazpacho, applewood-smoked totoaba, and acorn crunch.
3rd Course:
Green apple carpaccio with white wine, edible lemon and honey gel, edible cranberry gel, and creamy palo blanco cheese with date.
4th Course:
Glazed pork belly, sweet potato purée, confit vegetables, rosé wine reduction, and creamy spicy green beans.
5th Course:
Ossobuco with red wine sauce, confit carrots, warm cauliflower and sunflower cheese foam, Tuscan kale, and oyster aioli.
6th Course:
Palate cleanser: smoked hibiscus sorbet with three-chili salt.
7th Course:
Pre-dessert: profiterole with red berry diplomat cream.
